Let's be fair to Fabrika first, because the criticism lands harder when it's fair. The converted sewing factory is well run. The courtyard is genuinely pleasant in October. The hostel upstairs is decent value. If you are 23 and want to meet other people who are 23 and also staying at Fabrika, it works exactly as designed.

But understand what you are in: a hospitality product with a distressed-concrete finish. The "local creative hub" framing is marketing for a courtyard where a draft beer costs 12 lari, roughly double the neighborhood rate, and where on any given evening the crowd is four-fifths foreign and the remaining fifth works there. Nobody who lives in Chugureti drinks at Fabrika at Fabrika's prices. They drink within fifteen minutes of it, behind doors that don't need signage because the people they want already know. Here are three. We are naming names because gatekeeping addresses is the influencer move, and we are not influencers.

Mtsvane Kari (the green door)

Five minutes south, on Ninoshvili Street: a green metal door, no sign, a courtyard with mismatched chairs and a bar built from a single filing cabinet. The house saperavi is 7 lari a glass, poured from qvevri by the owner, Gia, who bottles in his uncle's marani near Telavi and will say so at length if you make eye contact. It tastes like a 25-lari pour in Vera. Someone will produce a guitar around 11. This is not staged. It is Tuesday.

Bina 6 (the apartment bar)

Ten minutes west, second floor of a residential building on Tsinamdzghvrishvili: an actual apartment converted into a bar, which in Tbilisi is a recognized genre rather than a novelty. Ring flat 6. Inside are four rooms, a piano missing three keys, and chacha infusions in repurposed jars lining the kitchen. The tarragon chacha is the order; it is 6 lari and it tastes like the color green in a way the soda never manages. The crowd is students, musicians from the conservatoire, and exactly zero people holding a phone above their head.

Sardapi (the cellar)

Fifteen minutes toward the river, a cellar under a pharmacy on Javakhishvili Street, entrance in the alley. Sardapi is the drinker's bar of the three: no music you'd notice, a beer list of small Georgian breweries the courtyard crowd has never stocked, and the best cold appetizers in the city after midnight, a claim we can defend because the 9-lari pkhali plate at 1 a.m. has ended arguments. We do not write that sentence lightly. The bartenders are slow on purpose. Adjust.

Go to Fabrika once, at 4 p.m., for a coffee and a look at the murals. That's the correct dose. Then walk out the gate, turn left, and spend the evening where the neighborhood actually spends it, at prices the neighborhood actually pays.
